The Awaiting Table is a real, hands-on learning experience based in the southern Italian town of Lecce, the gastronomical, architectural and cultural capitol of the Salento, the beautiful slice of fertile land kissed by two different seas.

It's not by accident that you'll find our school in a part of Italy you've probably never heard of. Nor that we offer courses unlike any other cooking school in Italy or elsewhere for that matter. We are the alternative, not only to other cooking schools in Italy, but to the industry standard, the way that cooking and culture have come to be taught.
For example, rather than standing around watching a bored foreign chef stuff an oven, we'll head out to the rural countryside for a simple and honest night out among the olive and fruit trees, for dinner at a good friend's house. We'll grill the sausages that you make, eat them on a pretty, country table of mismatched plates and candles and gathered wild flowers. We'll drink local, hand-made wine from water glasses, pick dessert right off a tree and spend the evening with some locals, laughing around the table. This is the beauty of life here in the south of Italy, and it can't be experienced in any classroom, cookbook or television studio kitchen.
You'll go to food festivals, open-air concerts and dinky little markets, where you'll get a modern feel for real Italy, and a part of it that is vibrant and gregarious and virtually unknown by non-Italians. Our students do learn a lot about our local food and wine, but that is only part of the picture. We invite you to learn more about our cooking school philosophy and the area in general as well.
