NB. These three courses are held at the castle only, an hour south of Lecce.

September 4th - 10th
The Awaiting Table Cookery School turns 8!

8 years and still going strong, we celebrate our school’s birthday each year at the castle, with weather warm enough to enjoy the pool several times a day.

Lessons include lots of bread baking, pasta making and working with a food-fired oven, as well as our traditional Salentine menu, and all Salentine wines. Our birthdays tend to be loud and friendly events, with half the town seemingly coming to many meals (the castle is in the centre of a provincial southern Italian town). If you’d like to learn a lot while having a lot of fun, this is the week for you.

October 16th - 22nd
Terronia: The New Wine School of Southern Italy.

This year we debut our new wine programme, which goes beyond the wines of Salento to include the entire south (La Puglia, Calabria, Sicilia e Basilicata). We’ve invited many of your favourite Southern Italian producers to come tell us about their wines, how they’re made them and what makes their wines and regions special.

You’ll taste over a hundred Southern Italian wines, tour a winery or two and get a sense of why this part of the world produces stunning yet still underappreciated wines from autocthonous (indigenous) grape species. There is no need to take the final exam but those that do and pass will be awarded a diploma from The New Wine School of Southern Italy.

November 6th - 12th
San Martino: Our Favourite holiday of the Year! Come spend it with us at the castle!
Cooking. Eating. Drinking. Live music.

Each year it gets out of hand. Sure you’ll spend your days and evening learning to make the foods of Salento with your own hands, but at mealtimes, things get a little nuts, with the pasta arriving in massive ceramic bowls large enough in which to wash a child, red wine flowing like a river and the pig in the oven big enough to feed half of a small town.

If you’ve never heard of San Martino, it’s soon to become your favourite holiday.

The price for all courses is 2245 for single occupancy, 1995 for double.
Non-participating spouses (or ‘Slackers’ as we call them) is 800 Euro, which covers all meals, wine and outings.
Full payment is required at time of booking.
